Bari-Uma “Bari (Super) and Uma (Tasty), Bari Uma Ramen means Super tasty Ramen. For Bari Uma, the broth (Tonkotsu soup) is made from carefully selected ingredients such as pork knuckles, chicken bones and potherbs and slowly simmered for 10 to 12 hours so that the maximum amount of the original flavor can be drawn out. Tamari soy sauce is added to complete the process, resulting in a thick rich pork soy sauce soup. “Rich and creamy soy ramen”

“Creamy Rich” caught my attention as it made me curious on the flavors and ingredients used in the broth. Menya Takeichi ramen signature “Creamy Rich Soy Based Chicken Ramen”. The toppings were delicious especially with the flavorful chicken tsukune (chicken ball). The texture of the broth compliments the toppings and noodles. Garnished with chopped spring onion and sauteed onion, it is a satisfying dish packed with flavor.

7. Mitsuyado Seimen

Mitsuyado Seimen with 20 years of history behind its name was first established in Tokyo. Throughout the years, it expanded to 20 outlets in Japan and started its global expansion in the last few years. Mitsuyado specialises in Tsukemen (aka Dipping Ramen) but we also serve soup ramen, maze-men (soup-less noodles), and rice dishes. “Soft and chewy ramen noodles”

Mitsuyado Seimen is famous for Tsukemen (dipping ramen). The service is quick and efficient. The difference between this ramen shop is you get to choose “hot” or “cold” noodles. Roasted Pork Tsukemen was served dry with a dipping sauce, and the chewy ramen noodles are thicker than usual. Their noodles are made daily from imported Japanese wheat flour. Their special dish is the Yuzu (citrus) dipping soup with pork meat, fish cakes and bamboo shoots. It’s worth to try their Tsukemen!

8. Ramen Santouka

The company was founded in March 1988, a mere four months after that soup received rave reviews from Hatanaka’s family for its amazing quality. It started with a single restaurant in Asahikawa, Hokkaido.
The restaurant had nine seats and a single item on the menu: shio (salt) ramen. This was the beginning of Hokkaido Ramen Santouka. Santouka’s soup is made by hand from scratch at all its restaurants, both in Japan and abroad.
The reason why we stick to our ingredients and production method is to serve “Family friendly, delicious, and healthy ramen.” That is why we use minimal salt and artificial seasonings.

“Shio flavor, the most popular”

I ordered “Tokusen Toroniku Ramen” and this ramen is only available in limited quantities every day. The soup of ramen is pork-based but we can choose from four types of flavors. I chose the shio flavor as it is known to be the most popular flavor. This is a pork bone based ramen but the flavor is not as strong which I personally find it enjoyable. The toppings are served in a generous amount. The texture of the meat is excellent and it brings the whole dish together. I would really recommend Santouka.

“Milky and very rich in flavor”

I ate “Sankoichi” ramen. This is a Tonkotsu ramen with their signature toppings! The noodle is straight and thin. The soup is milky and very rich in pork bone flavor. I love their soup! and also Kakuni is very juicy and delicious. The condiments can be found on the table – some spices, garlic and Benishouga (pickled ginger). Season the ramen to your liking. I also tried the ‘Bankara Ramen’ which is the signature ramen and is highly recommend, there are four types to fit your taste buds, Bankara Signature Ramen from Tokyo, Hakata-style Tonkotsu Ramen, Sapporo-style Miso Ramen and Tsukemen.
